Apple Raisin or Craisin Bars
 - Carol Kitts from CSU’s High Altitude Baking

Makes 36 bars. Preheat oven to 375 degrees. Plump ¾ cup raisins or craisins in hot water.
Grease 9” x 13” pan

¾ c. sugar or splenda
2 large eggs
1/3 c. vegetable oil or ½ c. butter softened
3 T. milk
1 ½ tsp. vanilla

Mix above ingredients in a large bowl.

1 2/3 c. all purpose flour
½ tsp. baking soda
¾ tsp. salt
1 tsp. cinnamon
 

Mix in a separate bowl. Add to previous mixture and stir until blended.

¾ c. peeled and chopped apple (1 med. apple)
plumped & drained raisins or craisins
1/3 c. chopped walnuts or pecans (opt)

Stir these into the previous mixture. Spread batter in the pan. Bake at 375 for 15-20 minutes or until the top springs back when touched lightly in the center. Cool slightly. Frost with Spice frosting (below). Cut into bars.

Spice Frosting

¼ c. packed brown sugar
3 T. butter or margarine
2 T. milk
½ tsp. cinnamon
¼ tsp. ground ginger
¼ tsp. ground cloves

Combine above ingredients in a small saucepan. Cook over medium low heat, stirring constantly until the mixture bubbles. Remove from heat. Stir in 1 tsp. vanilla. Slowly beat in 1 c. confectioner’s sugar until mixture is a spreading consistency. *Note: I had to add a bit more sugar to have enough to frost all of the bars.
