Delicious Asparagus Soup

Serves 6+

Saute: 2 large diced onions in 8 Tablespoons butter until very soft—about 20 minutes.
Add:
4 (141/2 ounce) cans chicken broth Bring to boil.
Remove woody ends from 2—3 bunches asparagus and discard. Cut off tips and set aside. Chop remaining asparagus into 2" pieces and add to broth. Cook until very soft.
 Puree, add V2 cup cream (if desired), salt & pepper to taste. Add tips and cook only until tender.
